Why choose this?

Buy it if you are shaping it by hand: the fat is what holds a burger or a kofta together.

100% grass-fed beef mince with enough fat to stay juicy on a grill. The one for hand-formed patties, kofta and meatballs; use the lean mince for sauces.

Cooking idea

How we’d cook it

A starting point, not a rule. Thickness, your pan and how you like it all move the numbers.

Method
Shape, then grill or pan
Time
4–5 minutes a side
Inside
71°C inside
  1. 1

Season, shape without overworking, and chill the patties or kofta for 20 minutes so they hold.

  2. 2

Hot pan or grill. Leave them alone until a crust forms before turning.

  3. 3

    Cook through to 71°C inside.

Storage

Keep refrigerated at 0–4°C. Freeze on arrival if you are not cooking it within two days.
