Cooking idea
A starting point, not a rule. Thickness, your pan and how you like it all move the numbers.
Out of the fridge 20 minutes before cooking. Pat dry, salt generously.
Render the fat cap first by standing each steak on its edge.
Sear, turn once, baste with butter, garlic and thyme.
