100% grass-fed sirloin with a thin strip of fat along one edge. Leaner than the ribeye, with a cleaner, beefier flavour and a firmer texture. The cut most people mean when they say “steak”.
Cooking idea
A starting point, not a rule. Thickness, your pan and how you like it all move the numbers.
Out of the fridge 20 minutes before cooking. Pat dry, salt generously.
Heavy pan, high heat. Render the fat edge first by holding the steak on its side for a minute.
Sear, turn once, finish with a knob of butter.
