Ingredients
Casserole
- Classic Beef SausagesFrom the counter320 g
- Red onion1
- Garlic cloves2
- White beans 240 g
- Tomato paste30 g
- Worcestershire sauce15 ml
- Dried thyme2 g
- Brown sugar5 g
- Beef stock cube1
- Tomato passata200 g
- Water200 ml
Potatoes
- Potatoes500 g
- Potato Seasoning5 g
Veg
- Broccoli florets150 g
Method
Bake wedges
- Preheat the oven to 200°C/180°C fan.
- Slice the potatoes into wedges (skin-on).
- Add to a lined baking tray, drizzle with oil and sprinkle with the potato seasoning.
- Bake for 30-35 min (turning halfway), or until golden.
Tip: If using an air fryer, preheat to 180°C. Mix the potatoes wedges, seasoning and a drizzle of oil together in the air fryer basket. Air fry for 20-25 min until cooked through, tossing halfway through.
Prep
- Chop the sausages into bite-sized pieces.
- Peel and finely chop the onions and garlic.
- Drain and rinse the white beans.
Fry sausages
- Heat a large frying pan over a medium-high heat with a small drizzle of oil.
- Fry the sausages for 3-4 min, until browned all over.
- Once browned, remove the sausages from the pan.
- Retain the pan and sausage oil.
Cook casserole
- Return the pan to the heat.
- Add the onions and garlic to the pan and fry for 5 min until softened.
- Add the tomato paste, Worcestershire sauce, thyme, brown sugar and 0.5 stock cube.
- Fry for 30 seconds until fragrant.
- Add the passata, measured water and beans.
- Bring to a boil, add the sausages back, lower the heat to a simmer and cover.
- Cook for 15-18 min, until the sauce has thickened.
Tip: For an extra thick sauce, remove the lid and cook for a further 5 min.
Cook broccoli
- Bring a pan of lightly salted water to the boil.
- Add the broccoli and boil for 3-5 min until tender.
- Drain.
