Sirloin Steak with Parmesan Truffle Fries & Caramelised Onion Sauce

Ingredients
Steak & sauce
- Sirloin SteakFrom the counter400 g
- Garlic cloves1
- Shallots1
- Worcestershire sauce15 ml
- Onion marmalade28 g
- Water150 ml
- Butter10 g
Fries
- Potatoes600 g
- Fresh chives15 g
- Parmesan30 g
- Truffle oil15 ml
Method
Bake fries
- Preheat the oven to 200°C/180°C fan.
- Slice the potatoes (skins on) into fries.
- Add the fries to a large lined baking tray.
- Add a drizzle of vegetable oil and a generous pinch of salt.
- Toss the fries in the oil until they are fully coated.
- Bake for 30 min or until golden and crisp.
Prep
- Meanwhile, peel and mince the garlic.
- Peel and finely chop the onion.
- Pick and roughly chop the parsley leaves.
- Grate the Parmesan.
Fry steak
- Pat the steaks dry with kitchen paper.
- Rub them with vegetable oil and season with salt and pepper.
- Heat a large pan over a high heat.
- Once very hot, add the steaks.
- Fry them for 2-4 min on each side or until cooked to your liking.
- Transfer the steaks to a plate.
- Leave them to rest.
- Reserve the pan.
Make sauce
- Return the pan to a medium heat.
- Once hot, add the onion with a pinch of salt.
- Fry for 3-5 min or until softened.
- Add the garlic, Worcestershire, onion marmalade, measured water and black pepper.
- Simmer for 3 min until the sauce begins to thicken.
- Remove from the heat.
- Stir in the butter.
Tip: Adjust the sweetness of gravy to your liking by using more or less of the onion marmalade.
Add Parmesan
- After the fries have baked for 30 mins add the truffle oil (to taste!), and parmesan.
- Roast for 5 min further or until the parmesan begins to melt and crisp up.
- Remove from the oven and top with a handful of parsley.
- Mix through.
