BBQ Sirloin Steak with Sour Cream Mash Green Beans & Charred Corn Salad

Ingredients
Steak
- Sirloin SteakFrom the counter400 g
- Garlic powder2 g
- Smoked paprika powder2 g
- BBQ spice2 g
- Barbecue sauce20 g
Mash
- Potatoes500 g
- Garlic butter25 g
- Sour cream60 g
Green beans
- Green beans150 g
- Crispy onions20 g
Corn salad
- Sweet corn kernels145 g
- Cherry tomatoes150 g
- Spring onion40 g
- Dijon mustard6 g
- Apple cider vinegar15 ml
- Honey15 g
Method
Marinate steak
- In a large bowl, combine the garlic powder, smoked paprika, BBQ spice, a drizzle of olive oil, a pinch salt and pepper.
- Season the steaks with salt and pepper.
- Add the steaks and coat in the marinade.
- Set aside at room temp.
Make mash
- Meanwhile, peel and chop the potatoes into bite-sized pieces.
- Add the potatoes to a pot of salted water and bring to the boil.
- Cook for 20-25 min until soft.
- Drain the potatoes and return to the pot.
- Add the garlic butter and mash until smooth.
- Mix in the sour cream.
- Season with salt and pepper to taste, and keep warm.
Tip: To make your mash fluffier and less wet, return the drained potatoes to the warm pot and let them steam for 2 min to release excess moisture.
Make corn salad
- Drain and rinse the corn.
- Heat a large pan on high heat with a drizzle of oil.
- Fry the corn and char for 3-4 min until slightly blackened.
- Halve the cherry tomatoes.
- Finely chop the spring onion.
- In a bowl, combine the mustard, vinegar, honey with a drizzle of oil and pinch of salt.
- Add the charred corn, tomatoes and spring onion to the dressing bowl.
- Toss to coat and set aside.
- Wipe and retain the pan.
Cook steak
- Return the pan to medium-high heat with a drizzle of oil.
- Cook the steaks for 2-3 min each side, or until desired doneness.
- In the last 1 min of cooking, brush the steaks with the barbecue sauce.
- Transfer the steaks to a plate and leave to rest.
- Wipe and reserve the pan.
Cook beans
- Meanwhile, trim the green beans and chop in half.
- Return the pan to medium heat with a drizzle of oil.
- Fry the green beans for 2 min.
- Add a splash of water.
- Cover and simmer for 3-4 min until tender.
- Add some of the crispy onions.
- Season to taste with salt and pepper.
Serve
- Plate up the BBQ Sirloin Steak with Sour Cream Mash, Green Beans & Charred Corn Salad.
