Spicy Beef Sausages & Sweet Potato Traybake

Ingredients
Tray bake
- Spicy Beef SausagesFrom the counter320 g
- Sweet potatoes400 g
- Red onion1
- Garlic cloves2
- Ras el hanout5 g
- Yellow pepper1
- Cherry tomatoes150 g
- Pomegranate molasses20 g
Garnish
- Fresh parsley15 g
- Labneh200 g
Method
Prep
- Preheat the oven to 220°C/ 200°C fan.
- Peel and chop the sweet potatoes into bite-sized pieces.
- Peel and slice the onion into wedges.
- Peel and mince the garlic.
Bake
- Place the sweet potatoes, onion wedges, garlic, ras el hanout, salt and a generous drizzle of olive oil onto a lined baking tray.
- Toss until coated.
- Bake for 15 min, then see step 4.
Prep vegetables
- Meanwhile, deseed and roughly chop the peppers.
- Pick and finely chop the parsley leaves.
Bake
- After 15 min, add the peppers, cherry tomatoes, pomegranate molasses, a generous pinch of salt and olive oil to the tray.
- Top with the beef sausage (spicy!).
- Bake for 10-15 min further or until the vegetables are nicely roasted and the sausages are cooked through.
Whip labneh
- In a bowl, whisk the labneh with a crack of black pepper until smooth.
Serve
- Serve the Spicy Beef Sausages and Sweet Potato Traybake.
- Garnish with the fresh parsley. Serve the labneh to the side or dolloped on the plate.
