Classic Beef Sausages & Mash with Onion Gravy & Mixed Veg

Ingredients
Sausages & Gravy
- Classic Beef SausagesFrom the counter320 g
- Red onion1
- Beef stock cube1
- Plain flour10 g
- Water300 ml
- Worcestershire sauce15 ml
- Dijon mustard6 g
Mash
- Potatoes600 g
- Whole milk100 ml
- Butter20 g
Veg
- Small Cubed Carrots100 g
- Green peas100 g
Method
Make mash
- Preheat the air fryer to 180°C, or the oven to 200°C/180°C fan.
- Peel and chop the potatoes into bite-sized pieces.
- Add the potatoes to a pot of salted water and bring to the boil.
- Cook for 15-20 min until soft.
- Drain the potatoes and return to the pot with the butter.
- Mash until smooth, gradually adding the milk until it reaches the desired consistency.
- Season with salt and pepper.
Prep
- Peel and finely slice the onions.
- Boil the measured water.
- Preheat the air fryer to 180°C.
Bake sausages
- Meanwhile, place the sausages onto a lined baking tray.
- Bake for 10-12 min, turning half way through.
Tip: Alternatively, air fry the sausages for 8-10 min, tunring halfway.
Make gravy
- Heat a large frying pan to medium heat with a drizzle of oil.
- Fry the onions for 3-5 min until softened.
- Increase the heat, add the flour, mixing for 1 min.
- Add the measured water and stock cube.
- Mix well until the stock cube has dissolved and the gravy has thickened.
- Once thickened, add the dijon and Worcestershire
Blanch veg
- Meanwhile, boil a kettle again.
- Add the carrots and peas to a bowl, with a pinch of salt.
- Pour over the boiling water and blanch the veg for 3-4 min until tender.
- Season with salt and pepper to taste.
Serve
