Sticky Rosemary Lamb Sausage Traybake with Onion Gravy

Ingredients
Bake
- Lamb & Rosemary SausagesFrom the counter320 g
- Potatoes500 g
- Fresh rosemary10 g
- Cherry tomatoes150 g
- Small zucchini 2
- Honey30 g
- Vegetable seasoning4 g
Gravy
- Red onion1
- Plain flour10 g
- Beef stock cube1
- Worcestershire sauce15 ml
- Dijon mustard6 g
- White sugar5 g
- Water300 ml
Method
Prep
- Preheat the oven to 220°C/200°C fan
- Pick and finely chop the rosemary.
- Chop the potatoes (skin-on) into bite-sized pieces.
- In a large bowl, toss the potatoes with half of the vegetable seasoning, half of the rosemary and a drizzle of olive oil.
- In a small bowl, combine the remaining rosemary and vegetable seasoning with the honey and drizzle of olive oil.
Roast potatoes
- Transfer the potatoes to a lined baking tray.
- Roast for 10 min.
Roast veg
- Meanwhile, chop the zucchini into bite-sized pieces.
- After the 10 min, add the zucchini and tomatoes to the tray with the potatoes.
- Drizzle with a small amount of oil and season with a pinch of salt and pepper.
- Roast for a further 10 min.
Make gravy
- Meanwhile, peel and finely slice the onion and boil the measured water.
- Heat a pan over a medium-high heat with a drizzle of oil.
- Fry the onions for 3-5 min until softened.
- Add the flour and mix well, fry for 1 min.
- Add the boiled measured water, whisking to ensure it is lump free.
- Add the stock cube, Worcestershire, sugar and mustard.
- Simmer for 3-4 min until thickened.
Roast sausages
- After the next 10 min of cooking, add the sausages on top of the veggies.
- Roast for a further 7 min.
- After 7 min, drizzle the glaze over the sausages.
- Roast for a final 5 min, until the sausages are cooked through.
Serve
