Ingredients
Sausage & Rice
- Spicy Beef SausagesFrom the counter320 g
- Brown onion1
- Sweet corn kernels145 g
- Black beans120 g
- Tomato paste30 g
- Taco seasoning10 g
- Smoked paprika powder4 g
- Basmati rice150 g
- Chicken stock cube1
- Water400 ml
- Grated cheddar 90 g
To serve
- Lime1
- Sour cream60 g
- Fresh coriander15 g
Method
Prep
- Peel and finely chop the onion.
- Chop the sausages into thick coins.
- Drain and rinse the corn and beans.
Fry sausage
- Heat a large pan over medium-high heat with oil.
- Fry the beef sausage for 4-5 min until well browned.
- Transfer to a plate and set aside.
- Reserve the pan.
Build base
- Return the pan to medium heat, adding more oil if needed.
- Add the onion and cook for 3–4 min until softened.
- Stir in the tomato paste, taco seasoning, smoked paprika, black beans and corn.
- Cook for 1–2 min until darkened and fragrant.
Finish rice
- Wash and drain the rice.
- Add the rice and stir to coat.
- Crumble in 0.5 stock cube, add the measured water and stir to dissolve.
- Return the sausage to the pan.
- Bring to a boil over a high heat.
- Once boiling, lower the heat and cover.
- Cook for 15-18 min, until the rice is tender and liquid is absorbed.
- Adjust seasoning to taste.
Tip: If needed, leave uncovered to reduce any excess moisture.
Add cheese
- Top the pan with grated cheddar.
- Cover with a lid and allow the cheese to melt.
Serve
- Cut the lime into wedges.
- In a bowl, mix the sour cream with a squeeze of lime juice to taste.

- Pick over some coriander leaves.
- Serve with any remaining lime wedges.
