Classic Spaghetti Bolognese with Parmesan

Ingredients
Bolognese
- Beef Mince less than 10%From the counter350 g
- Brown onion1
- Garlic cloves3
- Carrot1
- Olive oil1 tbsp
- Salt½ tsp
- Tomato paste70 g
- Soy sauce10 ml
- Worcestershire sauce15 ml
- Beef stock cube1
- White sugar5 g
- Peeled plum tomatoes400 g
- Dried oregano2 g
To serve
- Parmesan30 g
- Spaghetti250 g
- Fresh basil15 g
- Black Ground Pepper½ tsp
Method
Prep
- Peel and chop the onion and garlic.
- Peel and grate the carrot.
Fry vegetables
- Heat a pan over a medium-high heat with a drizzle of olive oil.
- Once hot, add the onions, carrot and garlic with a pinch of salt.
- Fry for 6-8 min until softened and beginning to caramelise.
Fry beef
- Add the beef mince and cook for 4-5 min further, breaking it up with a spatula.
- Add the tomato paste, soy sauce, Worcestershire sauce and 0.5 beef stock cube .
- Cook for 1-2 min further.
Simmer
- Add the sugar, peeled plum tomatoes (breaking them up with a spatula), and dried oregano.
- Bring to a boil, then reduce the heat to low and simmer, covered, for 15 min.
- Add a splash of water if needed.
- Meanwhile, grate the Parmesan.
Tip: Stew the sauce for as long as possible (even up to an hour) for extra flavour.
Boil pasta
- Bring a large pot of salted water to the boil.
- Once boiling, add the spaghetti.
- Cook for 8-10 min until 'al dente' or cooked to your liking.
Serve
- Serve the Classic Spaghetti Bolognese with Parmesan.
- Top with the grated Parmesan and fresh basil leaves.
- Finish with freshly ground black pepper and a drizzle of good quality extra virgin olive oil.
