Minute Steak & Tagliatelle Alfredo with Broccoli

Steak

  • Minute Steak320 g
  • BBQ spice4 g

Pasta

  • Fresh tagliatelle250 g
  • Cooking cream200 ml
  • Grated Parmesan45 g
  • Garlic onion powder4 g
  • Vegetable seasoning2 g
  • Chilli flakes2 g
  • Fresh parsley15 g
  • Broccoli florets150 g

Before you start

Have oil, salt, pepper and water to hand. Some ingredients are used in part; follow the method.

The cooking time assumes the ingredients are prepared as listed. Use fresh pasta, cooked rice and chopped vegetables where specified.

Use ready-made seasonings, marinades and dressings matching the ingredient list; flavours and allergens vary by brand.

Let’s cook.

  1. 01Fry steak

    • Bring a large pot of salted water to a boil for the broccoli and pasta.
    • Heat a large frying pan over a high heat with a drizzle of oil.
    • Pat dry the steaks and season them with the BBQ spice.
    • Once the pan is very hot, fry the steaks for 40 sec to 1 min per side.
    • Remove the steaks and set aside to rest.
    • Wipe and retain the pan.
  2. 02Boil broccoli

    • Meanwhile, boil the broccoli for 2-3 min until tender.
    • Using a slotted spoon, remove the broccoli and set aside.
    • Keep warm until serving.
    • Reserve the cooking water, boiling for step 4.
  3. 03Make sauce

    • Return the pan to a medium heat.
    • Add the cream, garlic onion powder, vegetable seasoning and a pinch of chilli flakes (spicy!)to taste.
    • Bring to a low simmer and add the parmesan, saving some for garnish.
    • Mix well and keep warm.
  4. 04Boil pasta

    • Separate the pasta.
    • Boil the pasta for 2-3 min, until tender.
    • Drain and reserve a cup of pasta water.
  5. 05Toss

    • Meanwhile, pick and finely chop the parsley
    • Add the cooked pasta and parsley to the sauce.
    • Toss to coat.
    • If required, add a splash of pasta water to loosen.
  6. 06Serve

    • Serve the Minute Steak and Tagliatelle Alfredo with Broccoli

Whole-cut beef: 63°C in the centre, followed by at least 3 minutes of rest. Check with a food thermometer; timing varies with thickness and equipment. Cooking temperature guide.
