How We’d Cook It
Roast
Roast · rest 20-30 min
Rest it properly or the juices end up on the board instead of in the meat.
- Prep & season Preheat the oven to 140°C. Keep the meat out for at least 1 hour before cooking. Season it generously and place it fat-side up in a roasting tray. Insert a meat thermometer into the thickest part, avoiding the fat.
- Roast Roast at 140°C until the centre reaches 48-50°C, roughly 50 min to 1½ hours depending on the size of the joint. Remove from the oven while you increase the temperature to 240°C, then return the joint and roast for about 10-15 min until the fat is golden and crisp.
- Rest & carve Rest for 20-30 min. The centre carries on rising as it rests, to about 55-57°C for medium-rare. Slice against the grain.
